Highly sounds like you needed a purge of settings (always delete your WTF, Interface and Cache when a new expansion drops), you had more addons than just ElvUI installed (like Shadow&Light, Enhanced, WindTools etc), or it was during the few fights that ElvUI has issues with. That has nothing to do with a resource-issue.
